This Baked Honey Marinade Cod features tender cod fillets glazed in a sweet and tangy honey marinade, baked to flaky perfection for a healthy, flavorful dinner option.

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, grated ginger, and lemon juice.
  3. Place cod fillets in a baking dish and season with salt and black pepper.
  4. Pour the honey marinade over the cod, ensuring each fillet is well coated. Let it marinate for 10 minutes.
  5. Bake uncovered for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Remove from oven, spoon some of the pan juices over the fillets, and garnish with chopped parsley if desired.
  7. Serve immediately with your choice of sides.

Notes

For extra flavor, marinate the cod for up to 30 minutes before baking. Serve with steamed vegetables or rice to complete the meal.
