A rich and creamy beef stroganoff made with tender strips of beef and tangy sour cream, perfect for a comforting dinner.

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season beef strips with salt, pepper, and paprika, then sear until browned but not fully cooked. Remove beef and set aside.
  2. In the same skillet, melt butter. Add onions and garlic, cooking until softened and fragrant, about 3 minutes.
  3. Add mushrooms and cook until they release their moisture and turn golden, about 5-7 minutes.
  4. Sprinkle flour over the mushroom mixture and stir well to coat. Cook for 1-2 minutes to remove raw flour taste.
  5. Slowly pour in beef broth while stirring to prevent lumps. Bring mixture to a gentle simmer until it thickens.
  6. Return beef to the skillet and simmer gently for 5 minutes until beef is cooked through.
  7. Remove skillet from heat and stir in sour cream and Dijon mustard until smooth. Adjust seasoning with salt and pepper.
  8. Serve hot over cooked egg noodles or rice, garnished with chopped fresh parsley.

Notes

For extra richness, add a splash of white wine when cooking the mushrooms or serve with a side of steamed green beans for a balanced meal.
