Buffalo Chickpea Wraps offer a spicy, tangy twist on a classic wrap using protein-rich chickpeas tossed in buffalo sauce, perfect for a quick and flavorful lunch or dinner.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 4 large flour tortillas or wraps
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/4 cup shredded carrot
  • 1/4 cup crumbled blue cheese or dairy-free alternative
  • 1/4 cup ranch or vegan ranch dressing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chickpeas with olive oil, garlic powder, smoked paprika, and buffalo sauce until evenly coated.
  3. Spread chickpeas on a baking sheet lined with parchment paper and roast for 20 minutes, stirring halfway through.
  4. Warm the tortillas briefly in a dry skillet or microwave for easier wrapping.
  5. To assemble each wrap, layer shredded lettuce, roasted buffalo chickpeas, diced tomato, shredded carrot, and blue cheese on a tortilla.
  6. Drizzle with ranch dressing and roll up tightly.

Notes

For added crunch, include some sliced celery or cucumber inside the wraps, or substitute buffalo sauce with BBQ sauce for a milder flavor.
