Cheesy Crowd-Pleaser Corn Dip

A creamy and flavorful baked corn dip loaded with cheese and spices, perfect for parties and gatherings.

  • 2 cups frozen corn kernels, thawed
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 small jalapeño, seeded and finely chopped
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in the shredded cheddar cheese, corn kernels, jalapeño, green onions, garlic powder, smoked paprika, salt, and pepper.
  4. Transfer the mixture to a baking dish and spread evenly.
  5. Bake in the preheated oven for 20–25 minutes or until bubbly and lightly golden on top.
  6. Remove from oven and let cool slightly before garnishing with fresh cilantro if desired.
  7. Serve warm with tortilla chips, crackers, or fresh vegetables.

Notes

For extra heat, leave some of the jalapeño seeds in or sprinkle with additional chili flakes before baking.
