Citrus Chicken Thighs

Juicy, flavorful chicken thighs marinated and cooked in a bright citrus sauce, perfect for a healthy and easy weeknight dinner.

  • 6 bone-in, skin-on chicken thighs
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 orange, thinly sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, whisk together orange juice, lemon juice, olive oil, garlic, honey, oregano, salt, and pepper to create the marinade.
  2. Place chicken thighs in a large resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably up to 4 hours.
  3. Preheat the oven to 400°F (200°C).
  4. Remove chicken from marinade and place on a baking sheet lined with foil or parchment paper. Reserve the marinade.
  5. Bake the chicken thighs for 25 minutes.
  6. While chicken bakes, pour the reserved marinade into a small saucepan and bring to a boil. Reduce heat and simmer for about 5 minutes until slightly thickened.
  7. Remove chicken from oven and brush the thickened citrus sauce over the thighs.
  8. Return chicken to oven and broil for 3-5 minutes until skin is crispy and caramelized.
  9. Garnish with orange slices and chopped parsley before serving.

Notes

For extra flavor, serve with steamed rice or a fresh green salad. You can also add a dash of crushed red pepper flakes to the marinade for a spicy kick.
