Coconut Curry Lentil Soup

A creamy and flavorful coconut curry lentil soup that combines aromatic spices with wholesome ingredients for a comforting and nutritious meal.

  • 1 cup red lentils, rinsed
  • 1 tablespoon coconut oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 1 bell pepper, diced
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Juice of half a lime

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger; cook for another minute until fragrant.
  4. Add curry powder, turmeric, and cumin; cook while stirring for 1-2 minutes.
  5. Pour in vegetable broth and add the rinsed lentils, carrot, and bell pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  7. Stir in coconut milk and simmer for an additional 5 minutes.
  8. Season with salt, pepper, and lime juice to taste.
  9. Serve hot garnished with fresh cilantro.

Notes

For extra creaminess, blend a portion of the soup before adding coconut milk or serve with a dollop of plain yogurt on top.
