  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 tbsp fajita seasoning
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional garnish)
  • Lime wedges for serving

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add the remaining olive oil. Sauté onions and garlic until aromatic and slightly translucent, about 2 minutes.
  3. Add the sliced bell peppers and cook for another 4-5 minutes until tender-crisp.
  4. Stir in the fajita seasoning, cumin, smoked paprika, salt, and pepper.
  5. Add the rice to the skillet and stir to coat it with the spices and vegetables.
  6. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  7. Return cooked chicken to the skillet and stir to combine all ingredients. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with chopped cilantro and serve with lime wedges.

Notes

For extra flavor, try topping with avocado slices or a dollop of sour cream when serving.
