Cottage Cheese Egg Bites

Delicious and protein-packed Cottage Cheese Egg Bites make a perfect quick breakfast or snack. These fluffy, savory bites combine creamy cottage cheese with eggs and fresh herbs for a nutritious start to your day.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or butter.
  2. In a medium bowl, whisk the eggs until well beaten.
  3. Stir in the cottage cheese, shredded cheddar cheese, chopped chives, salt, and pepper until combined.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are puffed and golden brown on top.
  6. Remove from oven and let cool for a few minutes before removing from the tin.
  7. Serve warm and enjoy!

Notes
