Crispy Corn Toast Bites are a crunchy and flavorful snack featuring golden toasted bread topped with a savory corn mixture, perfect for parties or quick bites.

  • 4 slices white bread, crusts removed
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped onions
  • 1 small green chili, finely chopped (optional)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons grated cheddar cheese
  • 1 tablespoon butter, for toasting
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Toast the bread slices lightly and cut each slice into 4 small squares.
  2. In a bowl, mix corn kernels, mayonnaise, chopped onions, green chili, lemon juice, paprika, salt, and black pepper until well combined.
  3. Butter one side of each bread square and place them butter-side down on a skillet over medium heat.
  4. Spread a generous amount of the corn mixture on the unbuttered side of the toast squares.
  5. Sprinkle grated cheddar cheese evenly over the corn mixture.
  6. Cook on the skillet for 3-4 minutes until the bread is golden brown and cheese starts to melt.
  7. Flip carefully and cook for another 1-2 minutes to crisp the other side.
  8. Remove from heat, garnish with fresh cilantro, and serve warm.

Notes

For extra spiciness, add a pinch of red chili flakes to the corn mixture or serve with a tangy dipping sauce like ranch or salsa.
