Pesto chicken is a flavorful Italian-inspired dish featuring tender chicken breasts coated with vibrant basil pesto, perfect for a quick and delicious dinner.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Cherry tomatoes for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes per side until golden.
  4. Remove chicken from heat and spread pesto evenly over the top of each breast.
  5. Place the chicken breasts in a baking dish and sprinkle Parmesan cheese on top.
  6. Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and juices run clear.
  7. Garnish with cherry tomatoes if desired and serve warm.

Notes

For an extra burst of flavor, serve the pesto chicken with a side of roasted vegetables or over a bed of cooked pasta.
