Flourless Yogurt Cake

A moist and tender flourless yogurt cake that is naturally gluten-free and perfect for a light dessert or snack.

  • 1 cup Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup almond meal (or finely ground almonds)
  • 1 teaspoon baking powder
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the yogurt, sugar, and eggs until smooth and well combined.
  3. Stir in the almond meal, baking powder, lemon zest, vanilla extract, and salt until just incorporated.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake for 35-40 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

For an extra touch, dust the cooled cake with powdered sugar or serve with fresh berries and a dollop of whipped cream.
