  • 4 boneless, skinless chicken breasts
  • 3 large onions, thinly sliced
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded Gruyère cheese
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 25-30 minutes.
  3. Add minced garlic and cook for another 1-2 minutes until fragrant.
  4. Stir in beef broth and dried thyme. Simmer for 5 minutes until slightly reduced. Season with salt and pepper to taste. Remove from heat.
  5. Place chicken breasts in a baking dish and pour the onion mixture evenly over the chicken.
  6. Sprinkle shredded Gruyère cheese on top of the onions.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Garnish with chopped fresh parsley if desired before serving.

For extra richness, serve with a side of crusty bread to soak up the flavorful sauce or add a sprinkle of fresh thyme before baking.
