1 lb beef sirloin, cut into bite-sized pieces
3 tbsp unsalted butter, divided
4 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and black pepper, to taste
2 lbs potatoes, peeled and chopped
1/2 cup whole milk
1/4 cup sour cream
2 tbsp cream cheese
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions
Place the chopped potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.
While the potatoes cook, heat 1 tablespoon of butter and olive oil in a large skillet over medium-high heat.
Season beef bites with salt and pepper. Add to the skillet in a single layer and cook for 2-3 minutes per side until browned and cooked through. Remove beef from the skillet and set aside.
In the same skillet, reduce heat to medium, add remaining butter and minced garlic. Sauté garlic until fragrant, about 1-2 minutes. Stir in thyme.
Return beef bites to the skillet and toss to coat them evenly in the garlic butter sauce. Remove from heat.
Drain the cooked potatoes well and return to the pot. Add whole milk, sour cream, cream cheese, and a pinch of salt and pepper. Mash until smooth and creamy.
Serve beef bites over the creamy mashed potatoes, garnished with fresh parsley.
Notes
For extra richness, drizzle a little extra garlic butter sauce over the mashed potatoes before serving.
