  • 1 medium head cauliflower, chopped into florets
  • 8 oz cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add mushrooms and cook for 5 minutes, stirring occasionally, until they release their moisture and begin to brown.
  4. Add cauliflower florets, salt, pepper, thyme, and red pepper flakes if using. Stir to combine.
  5. Cover the skillet and cook for 8-10 minutes, stirring occasionally, until cauliflower is tender but not mushy.
  6. Remove the lid and cook for another 2-3 minutes to allow any remaining moisture to evaporate.
  7. Garnish with chopped fresh parsley before serving.

Notes

For extra protein, add cooked chickpeas or top with a fried egg. Serve alongside quinoa or rice for a complete meal.
