This Jalapeno Poppers Nourish Bowl combines spicy, creamy jalapeno poppers with fresh vegetables and grains for a flavorful and wholesome meal that’s perfect for lunch or dinner.

  • 4 stuffed jalapeno poppers (store-bought or homemade)
  • 1 cup cooked quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 avocado, sliced
  • 1 cup mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare cooked quinoa according to package instructions and set aside.
  2. If the jalapeno poppers are frozen, bake or air-fry according to package directions until warm and crispy.
  3. In a bowl, combine cooked quinoa, black beans, corn, mixed greens, cherry tomatoes, and cilantro.
  4. Drizzle olive oil and lime juice over the quinoa mixture, and season with salt and pepper; toss gently to combine.
  5. Place the mixture into serving bowls and top each with sliced avocado and warm jalapeno poppers.
  6. Serve immediately and enjoy your spicy, nutritious nourish bowl.
