Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar, divided
  • 1 large egg
  • 1/4 cup molasses

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt.
  3. In a large bowl, cream together butter and 1/2 cup sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Shape dough into 1-inch balls, then roll each ball in the remaining 1/2 cup sugar.
  7. Place the sugar-coated balls on prepared baking sheets about 2 inches apart.
  8. Bake for 8-10 minutes until cookies are puffed and crackled on top.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, chill the dough for 1 hour before baking to enhance the spices and prevent spreading.
