Oven-Crisped Parmesan Potatoes

Crispy on the outside and tender on the inside, these Oven-Crisped Parmesan Potatoes are a flavorful and easy side dish perfect for any meal.

Ingredients

  • 2 pounds of baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, dried oregano, salt, and pepper until evenly coated.
  3. Spread the potatoes cut side down on the prepared baking sheet in a single layer.
  4. Bake for 20 minutes, then sprinkle the Parmesan cheese evenly over the potatoes.
  5. Return to the oven and bake for an additional 15-20 minutes, until the potatoes are golden and crispy.
  6. Remove from oven, garnish with fresh parsley if desired, and serve hot.

Notes

For extra flavor, serve with a garlic aioli or a squeeze of fresh lemon juice to brighten the dish.
