  • 1 cup powdered sugar
  • 3 cups Rice Krispies cereal
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. In a mixing bowl, combine peanut butter, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the Rice Krispies cereal until evenly coated.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for 30 minutes to firm up.
  5. In a microwave-safe bowl, melt the chocolate chips with vegetable oil in 30-second intervals, stirring until smooth.
  6. Dip each chilled peanut butter ball into the melted chocolate, allowing excess to drip off, then place back on parchment paper.
  7. Refrigerate until the chocolate coating is set, about 15 minutes.
