Homemade Peanut Butter Banana Oat Bars on White Plate

Deliciously chewy and naturally sweet, these Peanut Butter Banana Oat Bars make a perfect wholesome snack or breakfast on the go.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup natural peanut butter
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Add the rolled oats, ground cinnamon, and salt. Stir until all ingredients are well combined.
  4. If using, fold in the mini chocolate chips gently.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Remove from oven and cool completely before cutting into bars.

Notes

For extra crunch, sprinkle chopped nuts on top before baking or drizzle melted dark chocolate over cooled bars.
