Potato Soup

A creamy and comforting potato soup made with tender potatoes, onions, and a touch of cream, perfect for warming up on chilly days.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 stalks celery, chopped
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Melt butter in a large pot over medium heat. Add chopped onion, celery, and garlic; cook until softened, about 5 minutes.
  2. Add diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Use an immersion blender to puree the soup partially for a creamy texture, or mash some potatoes with a spoon.
  4. Stir in the heavy cream, and season with salt and pepper to taste. Heat through without boiling.
  5. Serve hot, garnished with shredded cheddar cheese and sliced green onions if desired.

Notes

For a richer flavor, add cooked bacon bits or a dollop of sour cream when serving.
