These Roasted Red Pepper Hummus Wraps are a vibrant and healthy meal option, blending creamy hummus with sweet roasted peppers and fresh veggies for a satisfying snack or light lunch.

Ingredients

  • 4 large whole wheat tortillas
  • 1 cup roasted red pepper hummus
  • 1 cup fresh spinach leaves
  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Lay out the tortillas flat on a clean surface.
  2. Spread about 1/4 cup of roasted red pepper hummus evenly over each tortilla.
  3. Layer spinach leaves, cucumber slices, shredded carrot, and parsley on top of the hummus.
  4. If using, sprinkle feta cheese over the vegetables.
  5. Drizzle a little olive oil and season with salt and pepper to taste.
  6. Carefully roll up each tortilla tightly to enclose the filling.
  7. Cut each wrap in half diagonally and serve immediately, or wrap in foil for later.

Notes

For added protein, consider adding grilled chicken or chickpeas to the wrap. These wraps also pair well with a side of fresh fruit or a simple green salad.
