This Shrimp Scampi Nourish Bowl features succulent garlic butter shrimp served over a bed of nutrient-packed quinoa and fresh vegetables, delivering a wholesome and flavorful meal in minutes.

  • 8 oz large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 2 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp to the skillet; cook for 2-3 minutes per side until pink and cooked through.
  4. Pour in white wine (or chicken broth), lemon juice, and red pepper flakes; simmer for 2 minutes to reduce slightly.
  5. Season with salt and pepper to taste, then stir in chopped parsley.
  6. Divide cooked quinoa into bowls and top with steamed broccoli and cherry tomatoes.
  7. Place shrimp and sauce over the quinoa and vegetables.
  8. Serve warm, garnished with extra parsley if desired.

Notes

For a creamier twist, stir in a tablespoon of grated Parmesan cheese just before serving, or substitute quinoa for brown rice to vary the grain base.
