Slow Cooker Italian Beef Sandwiches

Tender, flavorful Italian beef slow-cooked to perfection and served on crusty rolls, making for an irresistible and hearty sandwich experience.

  • 3 lbs beef chuck roast
  • 1 packet Italian dressing mix
  • 1 packet ranch dressing mix
  • 1 cup beef broth
  • 1/2 cup pepperoncini juice
  • 8 pepperoncini peppers
  • 4 Italian sandwich rolls
  • Provolone cheese slices (optional)
  • Salt and pepper to taste

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Sprinkle Italian dressing mix and ranch dressing mix evenly over the roast.
  3. Pour beef broth and pepperoncini juice over the roast.
  4. Add pepperoncini peppers on top of the roast.
  5. Cover and cook on low for 8-9 hours or on high for 4-5 hours until beef is tender and shreds easily.
  6. Remove the beef and shred it using two forks.
  7. Return shredded beef to the slow cooker and stir to combine with juices.
  8. Slice Italian rolls and add shredded beef. Top with provolone cheese if desired, then close sandwiches.
  9. Serve warm with some of the cooking juices for dipping.

Notes

For an extra flavor boost, toast the sandwich rolls before assembling and serve with Giardiniera for added crunch and spice.
