Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 4 garlic cloves, minced
  • 2 tbsp smoked paprika
  • 1 tbsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1-2 red chili peppers, finely chopped
  • Salt and freshly ground black pepper, to taste

  1. In a bowl, combine olive oil, red wine vinegar, minced garlic, smoked paprika, cayenne pepper, ground cumin, dried oregano, chopped red chili peppers, lemon juice, salt, and pepper to create the marinade.
  2. Place the chicken thighs in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill or skillet over medium-high heat.
  4. Remove chicken from marinade and cook for 6-8 minutes on each side or until fully cooked and slightly charred.
  5. Transfer to a serving plate and garnish with fresh chopped parsley.
  6. Serve hot with rice, warm bread, or a fresh salad.

Notes

For extra smoky flavor, try cooking the chicken over charcoal or add grilled bell peppers as a side.
