A vibrant and hearty nourish bowl packed with fresh vegetables, protein, and wholesome grains, perfect for a nutritious Superbowl feast.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup shredded kale
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 avocado, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup corn kernels
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 cup crumbled feta cheese

Instructions

  1. In a large bowl, combine the cooked quinoa, kale, cherry tomatoes, black beans, shredded carrots, and corn.
  2. Drizzle olive oil and lemon juice over the mixture.
  3. Toss gently to combine all ingredients well.
  4. Season with salt and pepper to taste.
  5. Top the bowl with sliced avocado and sprinkle with chopped cilantro.
  6. If desired, add crumbled feta cheese for extra flavor.
  7. Serve immediately or chill briefly before serving for a refreshing taste.

Notes

For added protein, toss in grilled chicken or tofu. This bowl can be served warm or cold based on preference.
