Turkey Cranberry Quesadillas

These Turkey Cranberry Quesadillas combine tender turkey, tangy cranberry sauce, and melted cheese in a crispy tortilla, making a perfect quick and flavorful meal.

Ingredients

  • 4 large flour tortillas
  • 2 cups cooked turkey, shredded
  • 1/2 cup cranberry sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add a little olive oil.
  2. Place one tortilla in the skillet and sprinkle evenly with 1/2 cup shredded mozzarella cheese.
  3. Layer shredded turkey, 2 tablespoons cranberry sauce, and a sprinkle of green onions on top of the cheese.
  4. Top with another 1/2 cup of mozzarella cheese and place a second tortilla on top.
  5. Cook for 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  6. Carefully flip the quesadilla and cook the other side for another 3-4 minutes.
  7. Remove from skillet, let cool for a minute, and slice into wedges.
  8. Repeat with remaining tortillas and ingredients.
  9. Serve warm and enjoy!

Notes

For extra flavor, serve with a dollop of sour cream or a sprinkle of fresh cilantro. You can also add a pinch of cayenne pepper for a spicy kick.
