  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1/3 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Biscuits (store-bought or homemade, enough for topping)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add diced onion and garlic, sauté until softened.
  3. Stir in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in chicken broth and milk, cooking until the sauce thickens.
  5. Add thyme, salt, and pepper. Stir in cooked turkey and mixed vegetables, heating through.
  6. Pour the mixture into a baking dish.
  7. Top the filling evenly with biscuit dough.
  8. Bake for 20–25 minutes or until biscuits are golden and cooked through.
  9. Let stand a few minutes before serving.
